Low-fat Pumpkin Chocolate Chip cookies


Mmmm, pumpkin. Maybe it’s the beautiful orange color or just the fact that fall – and the approaching holiday season – brings on thoughts of eating pumpkin, primarily pumpkin pie. This year I decided, a much as I love a good pumpkin pie, I was going to find a lower-fat pumpkin dessert recipe so I could enjoy the pumpkin and harbor a tiny bit less guilt (and maybe keep at bay some of those holiday pounds!)

The recipe for these pumpkin chocolate chip cookies was adapted from one originally found on Recipezaar.com and they are delicious. I meant to give some away, but… well, friends will have to benefit from a future batch! Enjoy!

Ingredients

  • ½ c unsweetened applesauce
  • ¾ c sugar
  • ¼ c egg white or 1 whole egg
  • 14 oz pumpkin puree (fresh or canned, not pie filling)
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 3 c whole wheat flour
  • 1 tbls cinnamon
  • 1 tsp pumpkin pie spice
  • 1 c dark chocolate chips or chunks

Directions

  1. Preheat oven to 375 degrees. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, stir together applesauce, sugar, egg whites, pumpkin and vanilla until well mixed.
  3. Sift in baking soda, baking powder, flour, cinnamon, and pumpkin pie spice. Stir until well mixed then fold in chocolate chips.
  4. Drop by heaping, rounded tablespoons onto parchment lined baking sheet. Bake for 12 minutes. Let cool on baking sheet for several minutes before transferring to a cooling rack.

I plugged the above recipe into a nutrition analysis calculator (I like http://caloriecount.about.com) and found that these very tasty treats can also be a great alternative to all the high fat desserts traditionally found at holiday events, and one that won’t cause your waistline to expand too quickly! Unless of course, you eat too many of them in one sitting…
